Since I can bake with this, I'll try it as the oil in one of my favorite quick bread recipes that is healthy to start with. It uses oatmeal, whole wheat flour, bananas, and orange juice and is simple to mix up. My kids love it and it's loaded with fiber and vitamins. If I use the pumpkin seed butter as the fat in it, it'll replace the butter which has little nutritional value. We are trying to eat as many whole foods as we can and when I find nutritional supplements like this seed butter, I like to use them instead of less healthy fats. The recipe wouldn't be nearly as good with a liquid oil because the fat needs to be beaten to aerate the batter a little better, otherwise this bread is rather heavy because of the bananas and oatmeal.

Depending on how this tastes in baked goods, I may make it the replacement fat for many of our other baked goods, too. I bought a cookbook that uses agave nectar instead of sugar for breads after learning that the glycemic index for this nutritional supplement is very low, unlike sugar. If the pumpkin seed butter works as a solid fat, then I'll have the best of all worlds when I feed my family delicious snacks that are really nutritional supplements in disguise.
